Venison Shepherds Pie



Ingredients:

1.)Approximately four ounces of Olive Oil
2.)A 10 or 12 inch non stick frying pan
3.)One and one half pounds of Ground Venison plus three quarters of a pound of Ground Pork or you can use straight ground vensison, two and one quarter pounds total
3.)One large onion chopped up.
4.)Six cloves of fresh garlic minced or One teaspoon granulated garlic
5.)One carrot peeled and thinly sliced
6.)One cubanel green pepper diced
7.)Two stalks of green onion chopped or one eighth cup of leeks chopped
8.)Salt and Pepper, approximately one-half teaspoon each
9.)Three pounds of Raw Potatoes cooked and made into mashed potatoes. After boiling and straining potatoes, I usually just add four ounces of butter, salt, pepper, and granulated garlic. I then use a potato ricer until all mashed pretty good and then just whip up with a hand mixer. No need for milk or cream, you will see they come out pretty smooth and delicious.

11.)Homemade Beef Gravy (See Brown Sauce Recipe)or your favorite canned recipe.




Method:
Pepare your mashed potatoes and when done set aside and keep warm by putting lid on pot. Combine meat with carrots, peppers,white and green onions or leeks,granulated garlic, salt and pepper. Mix well. Heat oil in frying pan and when hot carefully add meat mixture a little at a time until all of mixture has been used up.On high heat keep mixture moving by pushing and turning with a wooden spoon until all is nicely brown but not extremely well done.(Not dried out or crispy dark) Allow mixture to come to room temperature. Choose a pan that you can bake in be it aluminum or some type of casserole dish as long as its sides are three inches high.Make a layer of mashed potatoes on the bottom of the pan and then a layer of the meat mixture on top of the potatoes. Then make another layer of mashed potatoes on top of the meat mixture and again another layer of meat mixture on top of that layer of potatoes and then one last layer of mashed potatoes on top of that. So its potato,meat, potato, meat,potato.A few very thin pats of butter to top off the last layer and then bake at 375 degrees in a pre-heated oven for 30 to 45 minutes. Serve with hot gravy and warm bread.
